Foraging is a great way to move beyond mere observation into participation in the Natural World. This course is designed to give the student first hand experience and knowledge with which to identify, collect, prepare and eat a variety of these wonderful plants of spring. Greens and blooms will be our primary focus with some roots, shoots and buds will also covered.
